Rice is an "everyday, almost can't live without it" staple here. We've been eating nothing but brown rice and it's definitely more expensive than white rice, but it really tastes better.
You're absolutely right about taking more time to eat healthy. More time and lots more planning, I think.
I have two markets within walking distance of my house - both open 365 days a year!!!! You can't beat them for fruits and veggies. I'm a little nervous about buying meat there right now because it's all laying out on the counters without any refrigeration and it's starting to get hot. I like to support local people with their little stands as much as I can.
Beans with quinoa. That sounds good. Menus are all planned for this week, veggies cut and ready in the fridge... Maybe next week.

Don't be intimidated by beans from scratch. SO easy. You just need a stove top pressure cooker and you can have great beans in about an hour - beans of all kinds are a staple on the boat for quality and ease. When you combine beans with a starch or grain such as corn, quinoa, couscous, rice, potatoes...you get a magic complete protein. And they are delicious! And beans with eggs...wow, what a breakfast treat!

Let me know if you want some recipies!
